Aloo Gobi by Gigo


A traditional Indian vegetable dish made with potatoes and cauliflower, seasoned with classic Indian spices.



Ingredients:

  • 1/4 cup of vegetable oil  
  • 1 TBS cumin seeds  
  • 1 large onion sliced thin  
  • 3 TBS Coriander stalks chopped  
  • 1/2 TBS Tumeric  
  • 1/2 TBS Salt  
  • 1/2 paprika  
  • 1 green chili chopped fine (optional)  
  • 5 Canned tomatos chopped not sauce  
  • 1 1/2 LB potatos sliced thin
  • 1 head cauliflower, large dice
  • 1 TBS Ginger chopped fine  
  • 3 cloves of Garlic chopped fine  
  • 2 TBS coriander leaf    

Method

Fry cumin seeds in the pan with oil for 1 minute, add onion to the pan and fry until its milky white. Stir in the coriander stalks and fry for one minute. Stir in Turmeric, salt, paprika, Chili and tomatoes stir until it's combined. Put in Ginger, Garlic, potato, and cauliflower and mix well (if it's too dry, add a little bit of water). Put cover on and simmer for around 20-30 minutes. Taste for readiness and sprinkle coriander leaf on top and serve.

Notes: Serve at room temperature or warm.
