Artichoke Bean Rigatoni

This vegetarian pasta dish is made with tomatoes, black beans, artichokes and rigatoni.
 

Ingredients

  • 2 cloves garlic sliced
  • 3/4 box of rigatoni
  • 2 Tbsp olive oil
  • Pinch dried basil
  • Pinch dried thyme
  • Handful of small sized tomatoes (cherry is fine) approximately 8 (cut with knife to release juice when cooked)
  • 1 can black beans, drain most of liquid
  • 1 can of quartered artichokes with salt, drained
  • Ground salt and pepper to taste
  • Parmesean cheese for topping (optional)

Method

While boiling the pasta in large pot warm the olive oil in a medium skillet over medium heat. Saute garlic for just a minute to release flavor, then add all other ingredients except parmesean cheese. Simmer while pasta cooks to al dente. Drain pasta and mix with other ingredients. Salt and pepper to taste and top with fresh grated parmesean, if desired.
