This vegetarian pasta is stuffed with artichokes, spinach, and lot of cheese and topped with marinara sauce.
Combine spinach, chopped artichokes, tofu, chopped onion, minced garlic, shredded cheeses, salt and pepper. Cook manicotti according to box instructions.
Stuff cooked manicotti with above filling.
Pour 1/2 cup spaghetti sauce in 13 x 9 pan, arrange manicotti and top with remaining sauce and cheeses.
Bake at 325 degrees until sauce is bubbling and cheese has melted.
Notes:
For easier preparation, spread filling over cooked lasagna noodles and roll.
