Artichoke and Spinach Manicotti


This vegetarian pasta is stuffed with artichokes, spinach, and lot of cheese and topped with marinara sauce.



Ingredients:

  • 1 cup cooked and drained spinach
  • 1 14 1/2 oz can artichoke hearts
  • 1 12.3 oz package silken tofu
  • 1 small onion
  • 2 cloves garlic
  • 1 1/2 cup mozzarella, divided
  • 3/4 cup parmesan divided
  • 1/4 cup white chedder
  • 1/2 teaspoon salt
  • cracked black pepper to taste
  • 2 1/2 cups spaghetti sauce
  • 1 8 oz package manicotti

Method

Combine spinach, chopped artichokes, tofu, chopped onion, minced garlic, shredded cheeses, salt and pepper. Cook manicotti according to box instructions. Stuff cooked manicotti with above filling. Pour 1/2 cup spaghetti sauce in 13 x 9 pan, arrange manicotti and top with remaining sauce and cheeses. Bake at 325 degrees until sauce is bubbling and cheese has melted.

Notes: For easier preparation, spread filling over cooked lasagna noodles and roll.
