This vegetarian pasta dish is made with tomatoes, black beans, artichokes and rigatoni.
While boiling the pasta in large pot warm the olive oil in a medium skillet over medium heat.
Saute garlic for just a minute to release flavor, then add all other ingredients except parmesean cheese.
Simmer while pasta cooks to al dente.
Drain pasta and mix with other ingredients.
Salt and pepper to taste and top with fresh grated parmesean, if desired.
