Autumn Vegetarian Chili


This quick and easy crab chowder is a great way to get a great meal on the table in a short time.



Ingredients:

  • 1 bag Morning Star Grillers Crumbles, thawed
  • 1 onion, chopped
  • 1 can whole stewed tomatoes
  • 2 cans pinto beans
  • 1 can small kidney beans
  • 1 Tbsp garlic powder
  • 1/2 tsp sage powder
  • 1 tsp cumin powder
  • 1 tsp oregano powder
  • 1/2 tsp black pepper
  • 2 Tbsp olive oil
  • 1/2 bell pepper, cut into 4 large pieces
  • 1 packet "sazon"
  • Sour cream
  • Shredded sharp cheddar
  • Chopped cilantro

Method

Dice onions coarsely and sautee in olive oil until translucent. Add Griller crumbles and all powdered flavors; mix well. Chop tomatoes coarsely and add along with their juice. Add pinto beans with liquid. Drain kidney beans and add without liquid; mix well. Let simmer for 20 minutes (until bell peppers are soft). Pull peppers out. Serve with shredded cheese, sour cream, and cilantro.

Notes: -3 toppings are optional (try fat free sour cream). -Griller Crumbles is a meat substitute commonly found in the frozen foods section -I remove the bell peppers because it is the flavor, not their texture I like in this chili. -No salt necessary. -I make this in the fall and serve with sweet cornbread.
