Black Bean Soup


Canned black beans, rinsed and Canned black beans, rinsed and drained, go into this easy soup recipe. This bean soup is made with either homemade chicken stock or canned broth. Rice adds to the protein, and onions, tomatoes, bay leaves, cumin, and vinegar add flavor and interest.



Ingredients:

  • 2 medium onions, finely chopped  
  • 2 tsp. olive oil  
  • 4 cups defatted chicken stock  
  • 2 cans (16 oz. each) black beans, rinsed & drained  
  • 1 cup peeled and chopped fresh tomatoes  
  • 2 cloves minced garlic  
  • 2 bay leaves  
  • 1 tsp. ground cumin  
  • 2 cups cooked rice  
  • 2 tbsp. balsamic or red wine vinegar  

Method

In 4-quart pot over medium heat, saute onions in oil for 10 minutes or until lightly browned. Add the stock, beans, tomatoes, garlic, bay leaves & cumin. Bring to boil over medium-high heat. Cover, reduce heat to medium and simmer for 20 min. Discard bay leaves. With potato masher or back of a wooden spoon, lightly mash some of the beans. Stir in the rice & vinegar. Simmer for 5 minuts.
