Bow Tie Pasta with Brie

A rich and decadent cheese sauce made of brie cheese served with bowtie pasta and sauteed tomatoes. Mmmm.Ingredients
- 1 box of Bow Tie Pasta
- 2 cups of fresh chopped tomatoes (plum tomato is best)
- 1 cup of extra virgin olive oil
- 3 cloves of garlic, finely chopped
- 1 round of Brie cheese
- Freshly grated Parmesano/ Regiano
- 1 cup of freshly chopped Sweet Basil

Method
First put the Brie in the freezer. This makes it easier to take the rind off. Start cooking the pasta according to directions. Get everything that needs to be chopped, done ahead of time. Warm skillet, and pour in olive oil. On medium heat, add garlic and saute for about 1 minute. Add tomatoes and cook for about 10 minutes. While the sauce is cooking, cut rind off of the Brie and cut into chunks. After 10 minutes, add the basil. Cook for about 5 minutes. Add the Brie and let it cook just until it melts. Stir and mix in the pasta. Serve freshly grated Parmesano/ Regiano.
Notes: We love to make garlic bread and serve a salad with this meal. This is Crystal's FAVORITE!
