Bow Tie Pasta with Tomatoes & Pine Nuts

This tasty pasta is a great vegetarian main dish, but everyone will enjoy the flavorful dinner.
 

Ingredients

  • 2 Cups Bow Ties
  • 1 Chopped Onion
  • 2 Stalks Celery, chopped
  • 1/4 Cup Sliced Black Olives
  • 1 T. Pine Nuts
  • 1-2 Cloves Garlic
  • 1 Quart Canned Tomatoes
  • 1/2 Sliced Red Pepper
  • 1/2 Cup Feta Cheese
  • 1 Sliced Zucchinni/Cucumber
  • 1/4 Cup White or Red Wine
  • 1 Tblsp. Pesto ( Optional)
  • Olive Oil
 
Method

Saute onions, celery, peppers, garlic in hot oil. Add tomatoes, black olives, and pesto to make a sauce. Add wine and reduce to thicken. Season with salt and pepper to taste. A little water and cornstarch will thicken if desired. This should make a nice pungent sauce. Sprinkle with feta cheese when serving.

 

Notes: Boil pasta till al dente and top with sauce. Sprinkle with grated parmesan cheese and pine nuts to finish.
