Broccoli and Swiss Frittata

A healthy vegetarian frittata with broccoli, Swiss cheese, onion and spaghetti noodles.
 

Ingredients

  • 1 small onion, sliced
  • 1 tbsp butter or margarine
  • 1 lb package broccoli cuts
  • 2 cups cooked and drained spaghetti (leftovers work great)
  • 4 eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper
  • 1 tbsp soy sauce
  • 1/2 cup shredded Swiss cheese

Method

In a large skillet, cook onion in butter until soft. Add broccoli, cover and cook for 5 minutes until tender. Add pasta, stir well, cover and cook 5 more minutes until heated through. Beat together eggs, milk and seasonings and pour over pasta mixture in skillet. Cook on medium temperature for 3 to 5 minutes, lifting mixture as it cooks and allowing eggs to flow underneath. Sprinkle with cheese, cover and turn down to low, cook for 3 more minutes until mixture is set and cheese is melted. Serve in wedges with fresh fruit or carrot sticks.

 

Notes: This recipe is a great way to use leftover pasta. You can substitute zucchini or red peppers for the broccoli, and Cheddar for the Swiss cheese. The possibilities are endless.
