Bunnies Breakfast


Not your usual scrambled eggs--these ones are loaded with fresh vegetables, fresh basil and lots of cheese!



Ingredients:

  • 1 dozen eggs
  • Milk
  • 2 cups shredded colby/monterey jack
  • 1/2 onion, diced
  • 2 medium potatoes, diced
  • 1 zucchini, diced
  • 1 carrot, sliced
  • 1 yellow pepper, diced
  • 1/2 cup fresh baby spinach leaves
  • 3 or 4 leaves of fresh basil, rolled and sliced thin

Method

In a large skillet with 1 Tbsp of olive oil, saute onions, peppers, potatoes & carrots till potatoes are lightly browned. Mix eggs with a splash of milk in a seperate bowl (scrambled eggs.) Add zuchini & spinich to pan and cook down for a couple minutes till slightly wilted. Add egg mixture to pan and scramble all ingredients together as the eggs cook. Sprinkle cheese and fresh basil on top. Let sit for one minute and serve. A topping of fresh tomatoes would also be a good choice.
