Cabbage Fiesta Salad

This salad is full of protein and veggies and has a great dressing that you can make yourself.
 

Ingredients

  • Salad:
  • 3 cups shredded green cabbage
  • 3 cups shredded red cabbage
  • 1 can yellow corn (drained)
  • 1 can black beans (drained and washed thoroughly)
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped green onions
  • (Optional: Avocado slices and cherry tomatoes when serving)
  • Dressing:
  • 1 cup of olive oil
  • 1/2 cup of balsamic vinegar
  • 1 tbsp of any mustard (grainy texture)
  • 1 fresh lime juice
  • 1/2 tsp sugar
  • Salt and crushed pepper to taste

Method

Combine all salad ingredients in a dish and set aside. In a container, create the dressing; shake it well and pour over salad. Shake the salad to coat it and chill for 1 hour before serving. The longer it chills, the better it tastes.

 

Notes: For presentation, save outer cabbage leaves and use as a bowl. Serve salad in individual "leaf" bowl; add a slice of avocado and 2 cherry tomatoes,drizzle both with dressing and serve.
