This salad is full of protein and veggies and has a great dressing that you can make yourself.
Combine all salad ingredients in a dish and set aside. In a container, create the dressing; shake it well and pour over salad. Shake the salad to coat it and chill for 1 hour before serving. The longer it chills, the better it tastes.
Notes:
For presentation, save outer cabbage leaves and use as a bowl. Serve salad in individual "leaf" bowl; add a slice of avocado and 2 cherry tomatoes,drizzle both with dressing and serve.
