Cheesy Potato & Onion Casserole

Ingredients:
| 8 | Medium Potatoes, peeled and sliced |
| 1 | Medium Onion, finely diced |
| 3 Tbsp | Butter |
| 3 Tbsp | Flour |
| 2 cups | Milk |
| 1 tsp | Onion Powder |
| 1 tsp | Plus a Pinch Salt |
| ½ tsp | Plus a Pinch Black Pepper |
| 1 tsp | Garlic Powder |
| 1 tsp | Dried Tarragon |
| 1 tsp | Paprika |
| 2 cups | Shredded Colby Jack Cheese |
Directions:
Grease a 9 X 13 casserole dish, then layer with sliced potatoes and sprinkle with diced onions and sprinkle with a pinch of salt and pepper. In a medium saucepan over medium heat, melt butter, then add seasonings whisk in flour and cook for 1 minute. Slowly add milk while constantly whisking, bring to a boil, then turn heat down to low and remove from heat when the sauce starts to thicken. Pour over potatoes and top that with cheese. Cover with foil and bake at 375 degrees for 45 minutes, then remove foil and return to oven for 15 minutes.
Helpful Tips:
This is a great side dish for ham. If you want to make it a whole meal in one, dice 2 cups of ham and layer it on top of onions, but omit the salt.
