
Kids will love the crunchy topper on this macaroni and cheese. Cream cheese added to the cheese sauce adds extra creaminess.
Cook macaroni according to package instructions. While macaroni is cooking, melt butter in saucepan over medium heat. When butter is melted remove from heat and add flour slowly and stir until smooth. Return to medium heat, slowly add milk. Stir over heat until it begins to thicken. Cut cream cheese into small cubes and add to milk; add cheddar.
Let sauce cook until cheese is melted and smooth. Lightly coat a baking dish with cooking spray. Add cooked macaroni; pour cheese mixture over macaroni and fold together. Crush Ritz crackers and sprinkle over top. Bake at 350 degrees for 30 to 45 minutes.
