Curried "Chicken" and Spinach over Rice

A healthy vegetarian meal with chicken style strips, tomatoes, and spinach, seved over rice.
Ingredients
- 1/2 cup onion, chopped (about 1/2 large onion)
- 3 cloves garlic, minced
- 2 tablespoons peanut oil or vegetable oil
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 teaspoons madras curry powder
- 2/3 cup plain non fat yogurt
- 1 14.5 oz can diced tomatoes with jalapeno peppers, undrained
- 1 package vegetarian chicken style strips
- 1 10 oz pkg frozen chopped spinach, defrosted
- 4 cups hot cooked rice

Method
In a large skillet over medium high heat, saute onion and garlic in peanut oil until onion becomes transparent. Stir in spices, yogurt and tomatoes. Add vegetarian chicken strips, stirring to coat with sauce. Bring to a simmer, cover and cook 10 minutes over low heat. Add spinach and cook 5 to 10 minutes or until warmed through. Serve over cooked rice.
