Easy (Soy) Chili

This chili recipe is meatless. The protein comes from soy and canned beans (kidney, pinto, garbanzo or black beans.). Onion, green pepper, carrot, and tomato products are also present, along with chili powder, cumin, cayenne pepper and garlic for flavor.
 

Ingredients

  • 1 pkg vegetarian burger mix (enough to make 4 burgers)
  • 1 medium onion, coarsely chopped
  • 1 green pepper, coarsely chopped
  • 1 carrot, sliced
  • 3 cloves garlic, finely minced
  • 1 can (16 oz.) crushed tomatoes or tomato puree
  • 1 can (16 oz) tomato sauce
  • 1 can (16 oz) beans (kidney, pinto, garbanzo, or black beans)
  • 2 tbsp chili powder
  • 3/4 tsp cumin
  • 1/4 tsp cayenne pepper

Method

Cook burners according to package directions. Meanwhile, in a large pot, combine remaining ingredients. Crumble burgers with your fingers and add to chili mixture. Simmer for 30 minutes.
