Easy Artichoke Ziti


This meatless main-dish is full of pasta and artichokes. Basil and Romano cheese add flavor.



Ingredients:

  • 1/4 cup extra-virgin olive oil
  • 1/3 cup butter
  • 3 cloves garlic, minced
  • 1 teaspoon crushed red pepper
  • 2  8-oz cans artichoke hearts, drained and chopped
  • 1 pound dried ziti pasta, cooked and drained
  • 1/4 cup fresh basil, cut into slivers
  • 1/2 cup grated Romano cheese

Method

In a large skillet, heat oil and butter till butter melts. Stir in garlic and red pepper. Saute over medium-low heat 5 minutes, being careful not to burn garlic. Stir in artichokes and cooked ziti, tossing gently. Sprinkle basil and Romano over top.

Notes: This super easy super flavorful main- dish will become a weeknight staple.
