This Caribbean rice is packed with traditional seasonings, red peppers and pineapple. This makes a great addition to pork or chicken dishes.
In a medium sized saucepan, combine rice mix, pineapple juice, spices, pineapple chunks and bring to a boil over high heat, stirring constantly. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let sit for 5 minutes. Stir rice and serve.
