Method

Preheat oven to 350 degrees F and grease a 2 quart baking dish. In a large, heavy skillet melt butter over medium heat and saute onions for 5 minutes, add mushrooms and garlic and continue to cook for 10 more minutes, until onions are translucent. Layer onions in prepared casserole dish alternately with 1 1/2 cups shredded Swiss cheese. In a saucepan heat soup, milk and soy sauce until simmering. Pour over onion mixture and bake for 30 minutes. Top with bread and bake for 15 minutes. Top with remaining cheeses and bake for 15 more minutes until hot and bubbly.

Notes: This side dish is reminiscent of a big gooey bowl of French onion soup from your favorite restaurant. It's loaded with creamy onions and topped with a crunchy melted cheese and French bread crust. What a treat!
