Fresh Garden Zucchini Casserole

This casserole is a great way to use the zucchini that comes from your summer garden. Plenty of cheese and tomato sauce flavor this dish.
 

Ingredients

  • 2 lbs fresh zucchini, sliced, skin on
  • 1 jar tomato based pasta sauce
  • 1 large yellow onion, large dice
  • 1 lb fresh mozzarella
  • 1 lb cubed American cheese
  • Handful fresh basil, chopped

Method

Wash zucchini, and slice into 1/4 pieces. Place in a greased baking dish, add remaining ingredients, and mix slightly. Bake 45 minutes in a 350 degree oven.
