Fresh Mex Melt


Slices of bread are layered with Jack and Cheddar cheeses, bell pepper strips, red onion and avocado slices. A salsa mixture with tomatoes, cilantro and mayonnaise is spread atop and covered with another slice of bread. The sandwich is toasted in a skillet or griddle to melt the cheeses.



Ingredients:

  • Fresh Mex Salsa Spread:
  • 2 medium plum tomatoes, cut up
  • 2 tbsp chopped cilantro
  • 1 tbsp chopped red onion
  • 1 clove minced garlic
  • 1/4 mayonnaise
  • Olive oil for pan
  • 4 slices of your favorite bread (I use sourdough baguette, thickly sliced)
  • 8 slices Monterey Jack Cheese
  • 8 slices Cheddar Cheese
  • Thinly sliced multi-colored bell peppers
  • Thinly sliced red onion
  • 1 sliced avocado

Method

Prepare Fresh Mex Salsa Spread: In small food processor combine tomatoes, cilantro, onion & garlic. Pulse until finely chopped. Add mayonnaise; pulse until combined. Layer 1/2 the cheeses and veggies on two of the four slices of bread. Equally divide the Fresh Mex Salsa Spread on top. Add the last of the cheeses on top of the Spread, and close each sandwich with remaining bread. Pre-heat skillet with 2 Tbsp. olive oil. Place sandwiches in skillet, press sandwich firmly down with metal spatula. Melt until first side is golden brown, and then flip. Continue to cook until crispy and golden. Slice each sandwich on the diagonal.
