Fried Rice

Cooked rice is combined with wok-cooked carrots, peas, onions, and scrambled eggs for traditional fried rice. This vegetarian side dish is seasoned with ginger, garlic, peppers, and soy sauce.
 

Ingredients

  • 2 carrots, diced
  • 2 Tbsp. peanut oil
  • 1 tsp. salt
  • Pinch black pepper
  • Dash cayenne pepper
  • 3 eggs, beaten
  • 1/3 cup frozen peas
  • 1/4 cup pearl onions or diced yellow onion
  • 2 cloves minced garlic
  • Dash ground ginger or minced gingerroot
  • 2 to 4 Tbsp. soy sauce
  • 2 cups cooked rice

Method

Heat oil in wok on medium-high heat. Add carrots, salt and both peppers. Cook 3 to 5 minutes, stirring constantly. Move carrots aside in wok. Scramble eggs in center of wok. Add peas, onions, garlic, ginger, and 1 Tbsp of the soy sauce. Cook 3 minutes, stirring constantly. Add rice and remaining soy sauce; stir to combine and heat through, about 2 minutes. Makes 2 dinner-sized portions.
