Garbanzo-Cashew Burgers with Pineapple-Carrot Slaw

These vegetarian burgers have garbanzo beans, cashews & eggs for protein. After baking they are served in multigrain buns, topped with a fruit & veggie slaw.
Ingredients
- 1 14 ounce can garbanzo beans
- 1/4 cup carrots, grated
- 1/2 cup onion, diced
- 1/4 cup cashews, ground
- 1/2 teaspoon salt
- 1 1/2 tablespoons lemon juice
- 1/4 cup fresh parsley, chopped
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1/4 cup fine dry bread crumbs
- 6 multigrain buns, lightly toasted
- Pineapple-Carrot Slaw:
- 1 cup fresh pineapple, chopped
- 1 cup cabbage, shredded
- 1 cup carrot, shredded
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 tablespoon honey
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste

Preheat oven to 400 degrees and lightly grease a shallow baking pan. Mash garbanzo beans in a large bowl. Add the 1/4 cup carrot, the onion, ground cashews, salt, lemon juice, and parsley; mix well. Stir in eggs. Add flour and bread crumbs until mixture can hold shape. Form mixture into 6 burgers. Place onto baking sheet and bake about 20 minutes, turning halfway through, until burgers are lightly browned on both sides. To serve, place burger on multigrain bun and top with some of the pineapple-carrot slaw. Serve with extra slaw on the side. Slaw: Combine all slaw ingredients in a medium bowl and mix well. Cover and refrigerate until serving.
