These vegetarian burgers have garbanzo beans, cashews & eggs for protein. After baking they are served in multigrain buns, topped with a fruit & veggie slaw.
Preheat oven to 400 degrees and lightly grease a shallow baking pan. Mash garbanzo beans in a large bowl. Add the 1/4 cup carrot, the onion, ground cashews, salt, lemon juice, and parsley; mix well. Stir in eggs. Add flour and bread crumbs until mixture can hold shape. Form mixture into 6 burgers. Place onto baking sheet and bake about 20 minutes, turning halfway through, until burgers are lightly browned on both sides. To serve, place burger on multigrain bun and top with some of the pineapple-carrot slaw. Serve with extra slaw on the side.
Slaw: Combine all slaw ingredients in a medium bowl and mix well. Cover and refrigerate until serving.
