Global Rice and Tofu

This vegetarian recipe combines protein from brown rice and tofu. It had a bit of "hotness" from jalapeno peppers, and flavor from garlic and soy sauce. Sprinkle with ground flax seeds before serving.
 

Ingredients

  • 1 cup spring water
  • 1/2 cup organic short-grain brown rice, rinsed
  • 6 Tbsp. extra-virgin olive oil, divided
  • 1 medium sweet onion, diced
  • 2 jalepeno peppers, seeded, deveined, diced
  • 4 large cloves of garlic, crushed
  • 1/2 pound firm tofu (silken-type, if desired)
  • Soy sauce
  • 3 Tbsp. flax seeds, ground fine in a blender

Method

Place water in saucepan and bring to boil. Add rice and cook according to package directions, about 40 to 45 minutes. While rice cooks, place 3T. oil in heavy, 12 inch skillet. Add onion and saute over medium heat until translucent. Add peppers and 2 more tablespoons olive oil. Cook 3 minutes. Add crushed garlic and remaining oil. Add tofu before garlic browns. Press tofu into mixture in skillet. Stir 3 minutes. Add prepared brown rice and soy sauce to taste. Mix well. Sprinkle with flax seed and serve.

 

Notes: This is a Main Dish. It reheats well. Preparation time: 25 minutes. Cooking time: 40 to 45 minutes.
