Green Chili Cheese Enchiladas

These homemade enchiladas are prepared with plenty of cheese and green chili sauce. They are simple to prepare and a great way to spice up dinner.
 

Ingredients

  • 2 lg cans green chili enchilada sauce, divided
  • 2 8 oz pkgs cream cheese
  • 1 lb shredded cheese, divided
  • 36 corn tortillas, taco size
  • 1 can black olive wedges
  • 1 onion, diced
  • Optional: 1 lb cooked shredded chicken, pork or beef
 
Method

Preheat oven to 350 degrees F. Unwrap both cream cheese packages and microwave in large mixing bowl for 1 minute to soften. Prepare 2 9x11 inch pans, metal or glass, by pouring small amount of green chili sauce in both pans, tilting to cover bottoms evenly. In mixing bowl with softened cream cheese, add other can of green chili sauce and mix with hand held mixer or immersion blender. Add shredded cheese, reserving 1 cup for topping. Add diced onion, drained olive wedges, and meat if desired. Stir to mix. Soften 5 tortillas at a time on plate in microwave for 1 minute, turn stack over and microwave for 1 minute more. Place 1 heaped tbsp of filling on each tortilla, roll up and place over sauce in pan. Top filled pans with remaining green chili sauce, any leftover filling, and remaining cheese. Cover with aluminum foil and bake for 45-50 minutes, uncovering pans for last 10 minutes to brown.
