Grilled Italian Veggies on Ciabatta with Caper Mayonnaise

Enjoy these veggie sandwiches for lunch or a light dinner. The bread is spread with a caper mayonnaise and them filled with grilled eggplant, peppers, and mushrooms.
 

Ingredients

  • 1 eggplant
  • 2 red sweet peppers
  • 4 portobella mushrooms (whole cap)
  • 1/4 Cup olive oil
  • Sea Salt & pepper
  • 2 Cups mayonnaise
  • 4 Tbsp.capers
  • 1/2 Cup grated Parmesan cheese
  • 4 ciabatta bread rolls

Method

Slice eggplant in thin slices. Halve and seed red peppers. Lightly coat eggplant, peppers and mushrooms with olive oil, salt and pepper (to taste). Grill veggies to desired tenderness. Meanwhile, mix mayonnaise, capers, Parmesan cheese and salt and pepper (to taste). As veggies are nearly done, slice ciabatta bread in half and toast cut sides on grill. Spread bread with mayonnaise mixture. Place eggplant slices, red pepper half, and mushroom on bread. Serve immediately.

 

Notes: If eggplant is not available, yellow squash is a good substitute.
