Grilled Tomato-Pesto Pizza

This recipe makes two pizza crusts, topped with cream cheese, pesto sauce, fresh and dried tomatoes, & Parmesan cheese, and cooked on the grill.
Ingredients
- Dough:
- 2/3 cup warm water (105-110 F.)
- 1 Tablespoon active dry yeast
- 1 tsp. sugar
- 1 Tbsp olive oil
- 2 Tbsp fresh basil, chopped finely
- 2/3 cup whole wheat flour
- 2 to 3 cups all-purpose flour
- Topping:
- 3 fresh tomatoes, about 3" in diameter, sliced thinly (yellow or orange are best, but red is OK)
- 1/2 cup dried tomatoes (oil pack), drained and chopped
- 4 ounces cream cheese, softened
- 1 1/2 cups pesto sauce
- 1 1/2 cup grated parmesan cheese
- Olive oil for brushing

Method
In a large bowl allow yeast to soften in water with sugar for 5 minutes; stir in oil, basil and wheat flour. Add enough all-purpose flour until you have moderately stiff dough. Place in greased bowl, turning once to grease surface. Cover and let rise for 1 to 1 1/2 hours until doubled in size. Punch down; divide dough in half; set aside. Preheat grill to medium heat, grease grill or griddle. On a floured surface roll one portion of the dough into a oval shape about 3/8" thick. Brush with olive oil. Place on grill, oiled side down. Allow to cook without burning for 2-4 min., until lightly golden brown. Reduce heat to LOW and flip the dough over. Carefully spread with 1/2 of the cream cheese and spoon on 1/2 of the pesto, to within 1/4" of the edge. Arrange 1/2 of the tomato slices and 1/2 of the dried tomatoes on the crust; sprinkle with 1/2 of the cheese. Cover and cook for 5-7 min. You may need to adjust the heat so that it will not burn. Remove from grill, slice and serve; repeat with remaining ingredients for a second pizza.
Notes: This is a simple summer favorite. Just imagine that it is a HOT summer day and you need pizza, but you do not want to turn on the oven. What's a person to do? Grill it, of course! The warm cream cheese and pesto with those tomatoes, who can resist it?
