Grilled Veggie Po'Boys

These po'boy sandwiches are made with grilled veggies, including zucchini, eggplant, onion, bell peppers, and tomatoes.
Ingredients
- Marinade:
- 1/2 cup olive oil
- 1 Tablespoon minced garlic
- 1 Tablespoon Cajun-style mustard
- 4 submarine or hoagie rolls
- 1/2 cup mayonnaise
- 1 tsp. lemon juice
- Roasted garlic
- 1 zucchini (sliced lengthwise)
- 1 small eggplant (sliced)
- 1 large white onion (sliced)
- 1 red pepper (cut into 2" strips)
- 1 green pepper (cut into 2" strips)
- 2 tomatoes (thickly sliced)
- 1 head garlic

Method
Place the first three ingredients (for marinade) in shallow baking dish and mix well. Add all vegetables and fold into oil mixture to assure thorough coverage. On hot grill, grill vegetables until softened, but not mushy, charred, or burned. Squeeze roasted garlic from skin, mash into mayonnaise, and add lemon juice. Grill submarine rolls until slightly browned on the inside, spread with mayonnaise mixture and layer half of the grilled vegetables on each.
