Cubes of fresh veggies with tofu or paneer, marinated with lemon juice and spices, then grilled until golden brown--makes a great appetizer or vegetarian main dish.

  • Servings: 4-6

Ingredients:

2 Sweet Potatoes
2 Regular Red Potatoes
1 Red Pepper
1 Green Pepper
1 Yellow Bell Pepper Capsicum
2 Red Onions
10-15 Small White Mushrooms
10-15 Baby Carrots
1 Red Eggplant
10-15 Cubes Paneer or Firm Tofu
2 Firm Roma Tomatoes
1 cup Pineapple Chunks
1 cup Green Sour Apple Chunks
Spices:
1 Tbsp Cumin Powder
1 Tbsp Coriander Powder
½ Tbsp Black Pepper Powder
1 Green Chili Crushed or 1 Tsp Red Chili Powder
2 cloves Garlic, chopped or garlic
Powder
1 Tbsp Crushed Ginger
4 Tbsp Vegetable Oil
1 Tbsp Salt
1 Tbsp Lemon Juice or Vinegar
1 pkg Wooden Skewers

Directions:

Combine all spices in a one gallon resealable bag. Add lemon juice and oil, then shake well. Cut all the vegetables, fruits and the paneer or Tofu into pieces to use on the skewers. Place all vegetable pieces, paneer cubes or tofu, and fruit chunks in the bag. Shake well and place in the refrigerator overnight to marinate. Grill and serve.

Helpful Tips:

Before using the skewers, soak in water for 10 minutes so they don't burn on the grill.
