Hero Cheese and Veggie Sandwich

This hero of a vegetable sandwich is made with feta stuffed olives, roasted red peppers, sun-dried tomatoes and a homemade cheese spread.
Ingredients
- 1 loaf Italian bread, cut horizontally
- Cheese mixture:
- 4 ounces package cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sour cream
- 1/4 cup fresh chopped finely basil
- 1/2 teaspoon minced garlic
- 1/2 cup sun-dried tomatoes, not in oil and sliced in slivers
- 1/4 cup sweet bell pepper relish, drained
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Sandwich:
- 4 cups arugula rinsed, dried and torn into bite sized pieces
- 2 cups feta stuffed olives, drained and sliced
- 4 sweet banana peppers, drained and finely sliced
- 12 slices whole milk mozzarella cheese
- 2 cups julienne sun-dried tomatoes, drained
- 2 cups roasted red peppers, drained

Method
In a small mixing bowl, mix together both cheeses, add sour cream and mix until blended. Add remaining ingredients for cheese mixture then stir until well blended. Spread cheese mixture evenly on both flat sides of bread. Layer bread slices evenly with arugula, feta olives, sweet banana peppers, mozzarella cheese, tomatoes, and red peppers. Top with remaining bread slices. Cut into 4 equal pieces and serve.
