Johnny Kat's Vegetarian Salad Mix


This healthy and easy meal can be completed in the time that it takes to prepare and cool the pasta.



Ingredients:

  • 1 package low fat cheese filled ravioli or low-fat cheese filled tortellini
  • 6 cups spinach leaves, spring mix or romaine lettuce
  • 6 wedges white sharp cheddar cheese, cubed
  • 1 cup unsalted whole almonds
  • 1 cup dried cranberries
  • 4 links Tofurkey, cut links lengthwise and slice in halves (Can substitute tofu for tofurkey, cubed)
  • 5 tbsp olive oil
  • 1/4 cup roasted garlic rice vinegar

Method

Boil pasta according to package directions. Cool pasta and set aside. Place desired lettuce leaves in a large salad bowl. Add cheddar cheese cubes, almonds, cranberries, tofurkey and cheese filled pasta. Pour oil and vinegar mixture over salad mix. Toss salad until all ingredients are combined.
