Laguna Beach Rice Bowl

Ingredients:
| 1 cup | Green Onions, sliced |
| ½ cup | Celery, sliced |
| ½ | Green Pepper, chopped |
| 2 Tbsp | Butter or Margarine |
| 2 cups | Cooked Brown Rice |
| 2 | Tomatoes, coarsely chopped |
| 2 cups | Grated Sharp Cheddar Cheese |
| 1 | Small Bunch Parsley, finely chopped |
| 2 cloves | Garlic, finely chopped |
| 2 tsp | Vegesal Seasoning |
| ½ tsp | Pepper |
Directions:
Saute the onion, celery and green pepper in butter for 3 minutes or until barely tender. Combine cooked veggies in a bowl with the hot cooked rice, and the remaining ingredients. Mix well, allowing the cheese to melt a little before serving.
NOTE: To make it even easier, get the green onions, celery and green pepper off the salad bar.
