Laguna Beach Rice Bowl

|1 cup||Green Onions, sliced|
|½ cup||Celery, sliced|
|½||Green Pepper, chopped|
|2 Tbsp||Butter or Margarine|
|2 cups||Cooked Brown Rice|
|2||Tomatoes, coarsely chopped|
|2 cups||Grated Sharp Cheddar Cheese|
|1||Small Bunch Parsley, finely chopped|
|2 cloves||Garlic, finely chopped|
|2 tsp||Vegesal Seasoning|
Saute the onion, celery and green pepper in butter for 3 minutes or until barely tender. Combine cooked veggies in a bowl with the hot cooked rice, and the remaining ingredients. Mix well, allowing the cheese to melt a little before serving.
NOTE: To make it even easier, get the green onions, celery and green pepper off the salad bar.
