Moody Meatless Burger

Grilled portobello mushrooms are used instead of the usual burger patty. They're topped with feta cheese, then topped with fried green tomato slices and mozzarella cheese slices.
Ingredients
- 1/2 cup crumbled feta cheese
- 1 tsp chopped garlic
- Chopped fresh spinach, to taste
- 1/4 cup chopped green olives
- 1/4 cup chopped black olives
- Olive oil
- 1/2 cup mayonnaise
- 2 tbsp horseradish cream sauce
- 1/2 cup cornmeal
- 1 cup flour
- 1/2 tbsp cayenne pepper, or to taste
- Salt and pepper, to taste
- Green tomato, sliced
- 2 eggs
- 2 portobello mushrooms
- Fresh ball mozzerella cheese, sliced in 1/4-inch slices
- 2 hamburger buns, split and toasted

Method
Mix feta, garlic, some chopped fresh spinach, olives and a little olive oil together; let sit. Mix mayonnaise and horseradish cream sauce together and set aside. Mix flour, cornmeal, salt, pepper and cayenne pepper together. Beat eggs in a bowl. Dip green tomato slices in egg wash, then in flour mixture; fry in olive oil until browned. Clean mushrooms and discard stems; brush with a little olive oil; sprinkle with salt and pepper. Grill until tender. Spread mayonnaise sauce on bun bottoms; place a mushroom, cap side down, on each bun, then add feta cheese mixture inside mushroom cap. Top with fried green tomato slices, mozzarella cheese slices and the bun top.
