Mushroom Burgers

These mushrooms are baked with onions and topped with Sloppy Joe sauce before being served on a bun with lettuce and tomato.
Ingredients
- 4 medium portabella mushrooms, stems and gills removed
- 1 can Sloppy Joe sauce
- 4 medium onion, 1/4 inch slices
- 1/2 medium green bell pepper, diced
- 4 hamburger buns
- Sliced tomato
- Sliced lettuce

Method
Remove the stem and gills of mushrooms and discard. Place mushroom caps, top side down, in a baking dish. Place one onion slice in each mushroom cap. Sprinkle diced bell pepper over mushrooms. Pour Sloppy Joe sauce over top of mushrooms. Place baking dish in a preheated 350 degree oven for 25-30 minutes. Slather both sides of bun with butter and toast on a hot griddle until golden brown. To assemble, place bottom of bun on a plate. Place a mushroom cap on top. Garnish with tomato and lettuce or spinach. Place top on top and serve.
