One Hot Mama's Spicy Tofu & Broccoli

This vegetarian recipe uses tofu as the source of protein. It also contains broccoli, and is flavored with garlic, gingerroot, herbs, soy sauce, tahini, and ground red pepper.
Ingredients
- 3 TBS olive oil
- 4 cloves of garlic, minced
- 1 TBS grated fresh ginger
- 2 tsp oregano
- 2 tsp basil
- 1 tsp sugar
- 1/8-1/4 tsp cayenne pepper
- 1 pkg extra-firm tofu, cut into 1-inch cubes
- 2 tbsp. tamari or soy sauce
- 2 tbsp. sesame tahini
- 1/2 of a 16 oz. bag frozen broccoli florets
- Water
- Jasmine rice (enough for 6 servings)

Method
Heat a skillet over medium heat and add oil. When hot, stir in garlic, ginger, oregano, basil, cayenne and sugar. Add tofu and tamari; stir to coat. Let cook until golden, 3 minutes. Add broccoli and stir. Add tahini and about 1/4 cup water. Cover and simmer until broccoli is tender and flavors have combined, about 6-8 minutes.
Notes: Spiciness can be adjusted. Serve over jasmine rice, brown rice or baked potatoes.
