Quinoa Salad with Mediterranean Flavors

Not only does quinoa (pronounced keen-waw) taste wonderful, it is an ancient grain that is a nutritional powerhouse. In this salad, it is mixed with spinach, feta cheese, olives, raisins and walnuts, and drizzled with an herb vinaigrette.

  • Servings: 4-6


3 cups Quinoa, cooked and cooled (cooking instructions on package
1 cup Fresh Spinach, roughly chopped and stems removed
¼ cup Feta Cheese, small chunks
½ cup Black Olives, sliced or cut in half
¼ cup Golden Raisins
¼ cup Walnuts, toasted & chopped
¼ cup Plus 2 Teaspoons Olive Oil
¾ tsp Garlic Powder
¾ tsp Dried Oregano
¾ tsp Dried Basil
½ tsp Pepper
½ tsp Salt
½ tsp Onion Powder
½ tsp Dijon-style Mustard
⅓ cup Plus 1 Tablespoon Red Wine Vinegar



Place all salad ingredients in large bowl and mix lightly.


In small bowl, whisk together all dressing ingredients except the vinegar. Once blended, add the vinegar and whisk briskly. Slowly drizzle over the Quinoa mixture and serve.

Quinoa contains more protein than any other grain. Quinoa’s protein is of an unusually high quality – it is a complete protein, with an essential amino acid balance close to ideal. Quinoa can be substituted for almost any grain in almost any recipe and is red or white. It looks and tastes great on its own or in any dish from soup to salad.
