Roasted Artichoke Hearts


These artichokes, roasted with garlic, olive oil, sugar and pepper and topped with pine nuts, are a perfect side dish to chicken and pasta.



Ingredients:

  • 2 8.5-ounce cans artichoke hearts
  • 2 cloves garlic
  • Olive oil
  • 1 teaspoon sugar
  • ground black pepper
  • 2 tablespoons pine nuts

Method

Preheat oven to 375 degrees. Drain and quarter the artichoke hearts and place in a large glass baking dish. Crush and mince garlic, add to dish. Drizzle mixture with just enough olive oil to coat the artichoke hearts and garlic. Add sugar and black pepper. Mix all ingredients and distribute evenly in dish. Place dish in preheated oven on upper rack and bake for approximately 30 minutes, or until the artichokes begin to turn golden brown. Meanwhile, arrange the pine nuts on a baking sheet and place those in the oven on a lower rack to toast -- just long enough that the pine nuts begin to turn golden brown. Remove from the oven to cool. Once the artichokes have finished roasting, drizzle lightly with more olive oil, toss with the pine nuts and serve.
