Sake Mushrooms

Sauteed mushrooms in a rich sauce made with sake, garlic, ginger, scallions, and soy sauce.
 

Ingredients

  • 20 ounces white button mushrooms, halved
  • 1 cup sake
  • 1 Tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger
  • 2 Tablespoons extra-virgin olive oil
  • 3 scallions, minced
  • Salt and freshly ground black pepper

Method

Place mushrooms in a large zip top plastic bag. Add 3/4 cup of sake, soy sauce, sesame oil, garlic, and ginger. Close bag, shake well, and marinate for 1 hour. Heat olive oil in a large skillet over medium-high heat. Remove mushrooms from marinade and add mushrooms to skillet. Saute for 7-8 minutes, stirring occasionally. Add 1/4 cup of sake and cook until liquid has evaporated. Add scallions and season with salt and pepper. Mix well and remove from heat. Serve warm as a side dish.
