Savory Mushroom English Muffins


Cooked mushrooms & green onions are cooked in a savory mixture, spooned atop split & toasted English muffins, and garnished with cherry tomatoes in pesto.



Ingredients:

  • 4 whole wheat English muffins, halved 1 tablespoon canola oil
  • 12 ounces sliced mushrooms
  • 1 bunch green onions, chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Cherry tomatoes, tossed in prepared basil pesto, for garnish

Method

Toast halved muffins lightly on both sides. Heat oil in large nonstick skillet to medium-low. Add mushrooms and saute for a minute. Add green onions, Worcestershire, Dijon mustard, then season with salt and pepper. Stir well and spoon mixture on muffin halves and bake at 425 degrees for 2 or 3 minutes. Meanwhile toss cherry tomatoes lightly in prepared basil pesto for garnish.

Notes: My friends don't seem to notice the absence of meat with this one.

Number of servings: 4 or 8
