Sesame-Ginger Vegetable Stir Fry

A colorful mix of vegetables (zucchini, yellow squash, carrots and onions) are stir-fried and seasoned with soy sauce, ginger and sesame seeds.
 

Ingredients

  • 2 onions, chopped
  • 2 carrots, julienned thinly
  • 2 zucchini, sliced
  • 2 yellow summer squash, sliced
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon sesame seeds
  • 1/3 cup soy sauce
  • 2 tablespoons butter

Method

In a large skillet or wok, melt butter with ginger and sesame seeds over medium-high heat. Cook until sesame seeds are lightly browned. Add carrots and cook 3-5 minutes. Add remaining vegetables and soy sauce. Cook until vegetables are tender, 10-15 minutes.
