Simple Green Rice


Here's an easy side dish that you can stir together and forget about while it bakes in the oven. Simply stir together instant rice, mushroom soup, chilies, sour cream and mayonnaise and top with cheese.



Ingredients:

  • 2 cups instant white rice
  • 2  10.75-oz can condensed cream of mushroom soup
  • 1  8-oz can diced green chiles, drained
  • 1 cup dairy sour cream
  • 1 cup mayonnaise
  • 1 cup shredded smoked cheddar cheese (4 oz.)

Method

Lightly coat a 2-quart square baking dish with nonstick cooking spray. Combine all ingredients except cheese and place in prepared dish. Sprinkle cheese over top. Bake 20 to 25 minutes in 350 preheated oven or until rice is tender.

Notes: This is a comforting side dish that would be great on a Mexican buffet.
