Cooked brown rice is combined with cashews, raisins, onion & apple cooked with curry powder. The heated mixture is topped with yogurt when served.
Heat oil and curry powder in a large skillet over medium heat for 30 seconds; add cashews, raisins, onions and apples. When softened, add cooked rice, and salt and pepper to taste. Heat through. Serve topped with yogurt.
Notes:
May also top with chopped fresh cilantro.
