South Carolina Pizza

Green tomato slices are breaded & fried, and used along with artichokes, hearts of palm, mozzarella & pecans on a pizza crust spread with tomato sauce.
Ingredients
- 6 Green Tomatoes
- Salt and pepper
- 1 extra large egg, beaten
- 2 tbsp. whole milk
- 1 1/2 cups bread crumbs
- 1 tsp. Paprika
- 1 tsp. Dried parsley
- 1 tsp. Garlic powder
- Bacon drippings or olive oil
- 1 8 oz. can artichokes (water pack)
- 1 8 oz. can hearts of palm (water pack)
- Prepared Pizza Dough
- Flour
- Olive oil
- 3 cups tomato sauce
- 1/2 cup pecans, finely chopped
- 1 tsp. basil
- 2 16 oz. pkg. shredded mozzarella cheese

Method
Place pizza pan, pizza stone or baking sheet into oven and preheat oven to 450 degrees. Slice tomatoes 1/4-inch thick. Season with salt and pepper. Whisk milk and egg in shallow bowl until bubbles appear. In a second shallow bowl combine bread crumbs, dried parsley, paprika and garlic powder. Heat bacon drippings or olive oil in large frying pan. Dip tomatoes in egg mixture then dredge in bread crumb mixture. Place in frying pan and brown on both sides until crispy, and then remove to drain on paper towels. When drained, cut each tomato into quarters. Drain artichokes and hearts of palm. Chop artichokes into small pieces; slice hearts of palm into 1/8 inch slices. Place pizza dough on large wooden cutting board that has been dusted with flour. Press dough down and flatten, beginning in center and working outwards. Let dough rest for about 5 minutes, then begin pressing outward again until dough is about 1/2-inch thick all around and about 14-inches in diameter, leaving a slightly thicker lip around edges. Brush dough with olive oil. Ladle tomato sauce evenly over dough. Add fried green tomatoes, artichokes, hearts of palm and chopped pecans. Cover with shredded mozzarella. Sprinkle with basil. Open oven and lightly dust pizza pan or stone or baking sheet with flour. Slide prepared pizza onto pan, stone or baking sheet. Bake about 10-15 minutes or until edges of dough are lightly but evenly browned. Return pizza to cutting board. With pizza wheel or large serrated knife, cut pizza into slices and serve.
Notes: We buy our pizza dough from a local restaurant whose pizza we like; it makes a fairly large pizza pie. But you can also use these ingredients to make 2, 10-inch smaller pies.
