Spinach Artichoke Casserole

A healthy vegetarian casserole with eggs, low fat cottage cheese, spinach and artichokes.
Ingredients
- 5 egg whites
- 2 whole eggs
- 2 cups low-fat or fat free cottage cheese
- 2 cups cooked chopped spinach
- 1 cup chopped artichoke hearts
- 1/cup finely chopped onion
- 1 tsp salt
- 1 tsp black pepper

Method
Beat eggs and egg whites in a large mixing bowl. Stir in all remaining ingredients until well blended. Transfer to a buttered 9 x 13 baking dish. Bake at 350 degrees until set, approximately 40 minutes. Sprinkle with Parmesan cheese.
