Spinach Artichoke Casserole

A healthy vegetarian casserole with eggs, low fat cottage cheese, spinach and artichokes.
 

Ingredients

  • 5 egg whites
  • 2 whole eggs
  • 2 cups low-fat or fat free cottage cheese
  • 2 cups cooked chopped spinach
  • 1 cup chopped artichoke hearts
  • 1/cup finely chopped onion
  • 1 tsp salt
  • 1 tsp black pepper
 
Method

Beat eggs and egg whites in a large mixing bowl. Stir in all remaining ingredients until well blended. Transfer to a buttered 9 x 13 baking dish. Bake at 350 degrees until set, approximately 40 minutes. Sprinkle with Parmesan cheese.
