It is impossible to go wrong with this sweet potato and marshmallow casserole recipe. Topped with a sweet marshmallow creme, these sweet potatoes are cooked to perfection and will be a hit at any dinner table.

4 Large Sweet Potatoes
1 tsp Sea Salt
1 cup Brown Sugar
1 cup Low-fat Milk
2 Tbsp Ground Cinnamon
Marshmallow Creme


Place the sweet potatoes in a large pot with salted water and bring to a boil. Reduce the heat to low and let the potatoes simmer for about 20 minutes, which is when they should be tender and soft. Drain. Preheat your oven to 350 degrees F. Take out a bowl and mash the potatoes using a potato masher until there are no lumps. Stir in the brown sugar, milk and cinnamon into the potatoes. Evenly transfer the mixture into a greased casserole dish.

Cover with marshmallow creme. Bake in your preheated oven for 30 minutes and then serve.
