A hearty vegetarian salad--bulgur with tomatoes, onion and bell pepper on a bed of romaine and a lemon flavored dressing.
Soak bulgur for one hour in hot water, until all is absorbed. Mix all ingredients together except lettuce and let sit for hour or so. Serve on romaine lettuce leaves.
Notes:
If you prefer you can omit oil. This is a great dish for vegetarians.
