Tofu Shells

A quick and easy vegetarian dinner--pasta shells stuffed with tofu and spinach, then topped with spaghetti sauce and plenty of cheese.
 

Ingredients

  • 1 pkg large shell pasta
  • 1 pkg frozen spinach, well drained
  • 1 jar prepared spaghetti sauce
  • 1 pkg firm tofu, well drained
  • 2 cups mozzarella cheese

Method

Prepare pasta according to directions and drain. Mix spinach with tofu and stuff shells with mixture. Lay shells in pan and cover with sauce. Top with cheese and bake at 350 degrees for 20 minutes, or microwave on high to heat thoroughly.
