Mozzarella and Parmesan give a bold flavor to this grilled cheese along with the tasty truffle oil and artichoke hearts. What a rich sandwich.

¼ cup Shredded Mozzarella Cheese
¼ cup Shredded Parmesan Cheese
4 Tbsp Mayonnaise
1 tsp Truffle Oil
2 Tbsp Minced Green Onions
¼ tsp Ground Black Pepper
1 tsp Dried Italian Seasoning
7 oz Canned Artichoke Hearts, drained and chopped
3 Tbsp Butter or Margarine
8 slices Sourdough Bread


In a medium bowl, combine the cheeses, mayonnaise, truffle oil, green onion, pepper, Italian seasoning, and artichoke hearts. Combine thoroughly, then evenly spread the artichoke mixture on 4 of the bread slices. Top with remaining bread slices. Melt half the butter or margarine in a large skillet over medium heat. Spread remaining butter on the bread that hasn't been fried in the skillet yet. Fry sandwiches on each side for 4-5 minutes, or until golden.
