A healthy, vegetarian pasta dish made with broccoli, tofu, and peppers in a creamy low-fat sauce with tangy bleu cheese.
Heat frying pan and spray with Pam. Add onions, pepper and garlic and saute until onions are translucent. Combine tofu, broth mix and milk in a blender and blend until smooth. Pour over veggies and stir until slightly thickened. Reduce heat to low; add cheeses and cook, stirring constantly until melted and further thickened. Stir in broccoli and cook until heated through. Serve over hot pasta.
